KARPATHIAN MAKAROUNES

Makarounes

Ingredients for the dough

1 kilo (2lb 3 oz.) wheat flour
500gr (1lb 1.5 oz) white flour
2 soup-spoons of salt
4 cups water

Ingredients for the sauce

2 large onions
1/2 cup of oil
1/2 cup of vegetable margarine or butter
Any grated cheese

 

IMPLEMENTATION

Mix both flours in a bowl, and then slowly add the salt and the water.

The dough should be somewhat hard but manageable.

Sprinkle the working surface with flour.

Let the dough mixture stand for 5 minutes.

Mold the dough with the fingers in the shape of a rope.

Cut all pieces to a length of 4 cm. (1.5 inches) and pressing using 3 fingers with a downward and a rolling action each of the pieces of dough.

Place makarounes on a dry cloth until all are prepared.

Fill a big saucepan with water heat till it boils.

Place one soup-spoon of salt in the boiling water and place all makarounes in the boiling hot water are for about 15 minutes or until cooked to taste.

Pre-heat the oil and the margarine or butter in big frying pan for the sauce.

When hot enough add the onions and cook until brown.

Strain the makarounes.

Sprinkle with grated cheese a layer makarounes.

Repeat in layers with all makarounes.

Top again with grated cheese and the fried onions.

Makes 4 servings
