Tzatziki Sauce

Not a combination that one would have ever imagined pairing, but thankfully the Greeks did. Combined with a bunch of spices including lots of garlic and dill, it accompanies chicken, lamb or pork in a famous Greek gyro. It can be dipped in pita bread as an appetizer, placed inside of a pita with grilled chicken, feta cheese, lettuce and tomato or just served alongside a piece of chicken for dipping.

INGREDIENTS

1 large container plain yogurt, strained (or 2 small Greek yogurts preferably)

1 large English cucumber

1 teaspoon salt

1-2 cloves minced garlic (or 1 head of roasted garlic)

1 teaspoon red wine vinegar

1 teaspoon lemon juice

½ teaspoon dill weed

1 tablespoon olive oil

IMPLEMENTATION

Cut cucumber in half lengthwise and scoop out seeds. Grate cucumber or shred finely in food processor. Place shredded cucumber in a strainer and sprinkle salt on top to draw the water out. Allow to drain for about 30 minutes. Mix together with all other ingredients and refrigerate (tastes best after sitting for a few hours).
